2/3 cup whole wheat flour
1 cup loosely packed brown sugar
1 cup dry old-fashioned (rolled) oats
1 teaspoon of salt
1/4 teaspoon baking soda
1/2 cup Ultra Premium Extra Virgin Olive Oil
1/2 cup of peanut butter
1 large egg, beaten
1 tablespoon 1 % milk
Equipment needed: 9 x 9 inch baking pan, preferably nonstick
Preheat the oven to 375 degrees F
Combine the flour, sugar, oats, salt and baking soda in a large bowl. Blend together the olive oil, peanut butter, egg and milk in another bowl.
Make a well in the center of the dry ingredients and add the liquid ingredients. Using a rubber spatula, combine the ingredients together.
Press the mixture into the baking pan and bake for 14 to 15 minutes until the edges are browned. Cool in the pan. Cut into 8 bars.
